Characters are modelled by hand in fondant from reference photos the family sends. We do not buy in plastic toppers, which matters for newer themes where no ready-made decoration exists yet, and it means a character can be posed to fit the cake instead of the cake being arranged around a fixed figure.

First and second birthday cakes are a category of their own. They tend toward softer palettes, a single clear character and a shape that reads well in photographs, since the cake usually ends up in every picture from the day. Sculpted cakes, where the cake is carved to become an object rather than decorated with one, are also possible and need a little more lead time.
